Cidermaker’s Selections

North Carolina High Country Orchards

A sampling of ciders, for which 100% of the fruit in each bottling comes from a single high-country orchard.

This sampler includes Four 500ml bottles:

  • One each of Barrel 19 and Little Orchard ciders from our own Bent Apple Farm, just a few miles from the cidery.

  • Emmaus cider made with fruit from Emmaus Orchard Farm in the Glendale Springs Community of Ashe County, NC.

  • Altapass Blend, made with fruit from the historic and beautiful Altapass Orchard in Spruce Pine, NC.

Barrel Fermentations

Enjoy the warm toast, caramel and vanilla notes imparted by barrel fermentation and maturation. This sampler includes one 500ml bottle of each of the following ciders:

  • Barrel 19: A wild-yeast fermentation of Virginia Winesap apples grown at our farm. Intense red- and baked-apple aromas, good acidity, finished with subtle, wild-yeast funk.

  • Barrel 5: Ashe County grown Court Pendu Plat, Binet Rouge, Grimes Golden, Harrison and Hamm's Golden Apples. Coconut, green apple, and honeysuckle, aromas finished with intense minerality and tannins.

  • Barrel 21: Ashe County grown Puget Spice, Porter's Perfection, and Old Fashioned Winesap cider apples. Delicious, deep yellow apple, floral and toast aromas with a tannic finish.

  • The Little Orchard: A blend of Red, Black, Red Royal, Old Fashioned, and Myer’s Royal Limbertwigs grown at our farm. Aromas of peach, pear and apple, and smoke. 2022 harvest cider fermented and matured in French oak barrels.

Barrel 19: A wild-yeast fermentation of old fashioned Virginia Winesap apples grown at our farm in Ashe County, NC. Intense red- and baked-apple aromas, good acidity, finished with a subtle, wild-yeast funk.

Barrel 21: A blend of Puget Spice, Porter's Perfection, and Old Fashioned Winesap cider apples grown in Ashe County, NC. This dry cider is barrel fermented and matured, followed by bottle conditioning, yielding delicious deep yellow apple, floral and toast aromas with a tannic finish.

Barrel 5: A blend of traditional cider apples, including Court Pendu Plat, Binet Rouge, Grimes Golden, Harrison and Hamm's Golden, all grown in Ashe County, NC. This dry cider is barrel fermented and matured, followed by bottle conditioning. We taste coconut, green apple, and honeysuckle, finished with intense minerality and tannins.

The Little Orchard: A dry, naturally-sparkling blend of Limbertwig apples from The Little Orchard at Bent Apple Farm in Ashe County, NC. Varieties include Red, Black, Red Royal, Old Fashioned, and Myer’s Royal Limbertwigs. A rich, complex cider with orchard-fruit aromas of peach, pear and apple; characteristic Limbertwig “smoke;” finished with moderate acidity and mineral. 2022 Cider fermented and matured in French oak barrels.

The Dregs: The Dregs is all about sharing a cider maker's tradition. Each Fall comes pressing season and time to clear out the cellar for new cider. In past years, the remaining, long-matured ciders became the cider maker's share. We've grown up a little since then and have enough to share. The Dregs is a limited release blend of these mellow, long-aged ciders, and each bottling will be a unique and delicious surprise.

A Little Sweetness (Semi-Dry & Semi-Sweet Ciders)

Mountain Maelstrom: Perhaps our best-known cider. Semi-dry with fresh apple, pear and pineapple aromas, balanced by crisp acidity and soft tannins. A blend of 30+ varieties from small orchards in North Carolina and Virginia. A delicious, approachable, fruity, deep-straw colored cider with balanced sweetness, acidity and tannins.

Bent Apple: Semi-dry with toasted oak and caramel aromas balanced by fresh apple acidity. This cider takes its name from our sister farm — Bent Apple Farm — where much of the fruit was grown. It is a blend of Appalachian heirlooms such as Virginia Beauty, Double Red Delicious, Hewe’s Crab and Limbertwigs and European bittersweets such as Nehou and Tremlett’s Bitter. Bourbon barrel aging contributes subtle notes of oak and caramel.

School House: Named for the Old Lansing School in Ashe County, this semi-dry cider blends early-season cider-apple varieties including Hewe's Crab, Graniwinkle, Nehou, Tremlett's Bitter, and Yarlington Mill. The full-bodied, unfiltered cider has a deep straw color and slight pectin haze.

Porch swing: We made this cider for warm weather sipping, but it’s all good anytime of year. It’s blended from late-season dessert apples, traditional cider varieties, and some wild crab apples that grow up on the hill behind our farm. We get citrus peel and mineral on the nose. The predominant flavor is of fresh apples with just a little sweetness and malolactic funk on the finish.

Penny Stick: This semi-sweet cider is a blend of mountain grown apples from Ashe and Avery Counties, NC. A light addition of whole-flower Centennial hops enhances the natural green and candy apple aromas of the apples. The finished cider reminds us of the old-fashioned penny stick candies from our childhood, with a great balance of sweetness, acidity and fruity aromas.

Single Orchard Ciders

Emmaus: A dry, naturally-sparkling cider made exclusively with traditional cider fruit grown by Emmaus Orchard Farm in Ashe County, NC. Apple varieties include Golden Russet, Grimes Golden, Harrison, and Porter’s Perfection. The fruit from the orchard’s young trees create a lively, delicate cider with aromas of pear, honeysuckle and pineapple followed by a bright, mineral finish.

The Little Orchard: A dry, naturally-sparkling blend of Limbertwig apples from The Little Orchard at Bent Apple Farm in Ashe County, NC. Varieties include Red, Black, Red Royal, Old Fashioned, and Myer’s Royal Limbertwigs. A rich, complex cider with orchard-fruit aromas of peach, pear and apple; characteristic Limbertwig “smoke;” finished with moderate acidity and mineral. 2022 cider fermented and matured in french oak barrels.

Altapass Blend: This semi-dry cider is a blend of York Imperial, Stayman Winesap, and Yates apples harvested from the Orchard at Altapass. Each variety contributes its distinct character: bright candy-apple aromas from the Stayman; soft tannins and deep-straw color from the York; and a mineral finish from the Yates. Fermented in October, the varietal ciders were matured on their lees for five months before final blending and bottling.

Foggy Ridge: Diane Flynt pioneered the revival of American cider culture in the Southeast.  Though retired from cider-making, she continues to grow cider fruit at her orchard near Dugspur, VA.  We're proud to be among the few cideries able to procure Diane's fruit.  This semi-dry cider is a blend of Roxbury Russet, Ashmead's, Cox's Orange Pippin and Grimes Golden from the Foggy Ridge 2022 harvest.  Straw-colored with yellow-apple, peach and honeysuckle aromas and a bright, tannic finish that dissolves into creamy bubbles.

Fruit Wines & Steeped ciders

We use only local, whole fruit and ingredients. No aseptic purees.

Old Orchard Creek: This fruit wine is a blend of blueberries from Old Orchard Creek Farm in Ashe County and long-aged apple cider. To extract the blueberries' flavor and color, we fermented the crushed berries and pressed after fermentation, as you would a red wine. The result is a bubbly, semi-sweet yet tart cider with prominent blueberry aroma and flavor and a warm, herbaceous finish. Delicious alone, and an excellent mixer for your next craft cocktail creation.

Carpenter Hill: This cider is made with organic purple raspberries, grown in Ashe County, NC. The Carpenter Heirloom raspberry variety is a spontaneous hybrid of red and black varieties, developed by the Carpenter family in the 1960s and now grown on their farm along Helton Creek. We add whole raspberries to apple cider for secondary fermentation, creating a ruby-colored, semi-dry cider with fruity raspberry and citrus aromas.

Hopped Molley: Semi-sweet with orchard blossom, apple, pear and lychee aromas. This cider is a blend of late-season apples from the mountains of North Carolina and Virginia. We dry hop the cider with NC Grown Cascade hops from Tink’s Hop Farm and then mature for several months. The hops add complex floral aromas to a semi-sweet cider.

Lavender Honey is a blend of apple cider, gently infused with fresh lavender flowers from Good Ashe Lavender Farm, in Ashe County, NC.  The cider is subtly sweetened with our own apple blossom and wild flower honey from Bent Apple Farm, yielding a semi-dry cider with notes of lavender, lemon, orchard fruit, and a honeycomb finish.  Delicious alone and an excellent mixer for cocktails.
